Ingredients

  • 6-8 oz oz elbow noodles
  • 1 lb ground beef or turkey
  • 1 green bell pepper (diced)
  • 1 onion (diced)
  • 1 tsp minced garlic
  • 1 cup water
  • 14 oz can diced tomatoes
  • 2 TBS chili powder
  • 12 oz corn
  • 12 oz peas
  • 1 tsp salt
  • 1/2 black pepper
  • 4 oz shredded cheddar

Preparation

Step 1

Prepare noodles as directed to al dente. Drain.

Preheat oven to 350 degrees.

Spray stockpot with cooking spray. Saute onion and bell pepper. Stir in meat and cook until no longer pink and veggies are soft. Stir in garlic and cook for one more minute. Stir in water, tomatoes, chili powder, corn, peas, salt & pepper. Stir in noodles. Stir in cheese.

Pour into greased 9x13 baking dish. Bake 30 minutes.
