Ingredients

  • 3/4 C mashed ripe banana (about 2)
  • 3/4 C non-fat plain yogurt
  • 1/2 C honey
  • 1/3 C olive oil
  • 2 t vanilla extract
  • 2 1/2 C white whole-wheat flour
  • 2 t baking powder
  • 1/2 t baking soda
  • 1/2 t salt
  • 1 generous C blueberries, fresh or frozen
  • 1/2 toasted chopped walnuts (optional)

Preparation

Step 1

Preheat oven to 425 F. Spray tin with olive oil spray.

In large bowl, place bananas, yogurt, honey, olive oil and vanilla, stirring until well mixed.

In separate bowl, sift flour, baking powder, baking soda and salt. Add dry ingredients to banana mixture, stirring until just combined. Gently fold in blueberries and nuts.

Spoon into muffin tin. Place in oven and reduce heat to 400 F. Bake for 35 to 40 minutes or until tops spring back when lightly touched. Let cook in muffin tin for 10 to 15 minutes before transferring to rack.
