Frosting - Fluffy - Vegan
Vanilla, choc & coconut variations
combination of "Vegan Cupcakes take over the World" fluffy butter cream frosting p 142 & Wilton "Cake Decorating Easy as 1,2,3" p6 - which is medium consistency frosting
for coconut frosting for Mel & Jaz wedding cake-added 1/2 cup soy milk powder (Better Than Milk brand - as per Babycakes); also added 1 1/8 tsp coconut extract (not imitation)
Topped w/toasted sweetened coconut flakes & curls; also add coconut curls to filling for texture & interest
To toast non sweetened coconut curls:
moisten curls w/simple syrup, toast in oven at 350 for approx 4 mins.
Mixed sweetened & unsweetened to press into frosting
Yield: 3 cups
As per The Cake Bible p513:
for (1) 9 x 13 layer need 4 1/2 cups frosting - prob need more than her recommendations

Ingredients
- For choc variation:
- 1/2 cup shortening
- 1/2 cup margarine, softened but not melted
- 3 1/2 cups confectioners sugar, sifted if lumpy (Wilton uses 4 cups)
- 1 1/2 teaspoons vanilla extract(Wilton uses 1 tsp)
- 1/4 cup plain non dairy milk or creamer (unsweetened)(4 tbs = 1/4 cup)
- (Wilton uses 2 tbs milk or water)
- OPT: add 1/4 - 1/2 cup Better Than Milk brand soy milk powder dissolved in the milk-or try incorporating in fats-
- 3 oz melted unsweetened choc
- 1 tbs milk
- unsweetened cocoa powder, if desired - 2 -3 tbs
- OPT: chopped choc pieces
- OPT: Top frosted cake w/sliced toasted almonds
- for coconut variation:
- add 1 1/8 tsp coconut extract to frosting
- Top finished cake w/shredded coconut, coconut curls, sweetened & toasted if desired

Preparation
Step 1
Cream shortening & margarine together until well combined & fluffy
Add sugar & beat on medium speed til well mixed, about 3 mins
Add cocoa powder, vanilla & milk, beat another 5 - 7 mins until fluffy. Add additional liquid if thinner frosting is desired.
Can be refrigerated in airtight container for up to 2 weeks. Let come to room temp before rewhipping

For choc variation: Add melted choc with vanilla & milk, adding additional 1 tbs milk; add unsweetened cocoa powder to taste if desired.
Opt: add chopped choc pieces to frosting or sprinkle over finished cake.
Opt: Sprinkle finished cake with sliced toasted almonds.

Top with combination of sweetened & unsweetened shredded coconut & coconut curls, toasted first if desired
