Ingredients
- 4 chicken breast; boneless, skinless
- 1 tablespoon ranch style dressing, fat free
- 16 oz peaches or pears; drained & chopped
- 11 oz mandarin oranges
- 1 cup red or green bell pepper; diced
- 1/3 cup mayonnaise, fat-free
- 2 tablespoon lime juice (fresh)
- dash cayenne pepper
- 10 flour tortillas, fat-free

Preparation
Step 1
Arrange chicken breasts on a broiler pan sprayed with non-stick cooking spray. Brush with ranch-style dressing. Broil at 500' four inches from heat for 7 to 10 minutes. Dice chicken. In a bowl, combine the chicken, peaches, oranges, bell pepper and onions. In separate bowl, stir together mayonnaise, lime juice and cayenne. Stir dressing into chicken mixture and toss gently. Salad can be covered and chilled up to 24 hours ahead.
