Ingredients
- 2 2/3 2 2/3 cups lettuce mix
- 8 flour tortillas, fat-free; warmed
- 1 1/2 1 1/2 cups chicken breast; boneless, skinless
- 20 oz pineapple, chunks; drained
- 1/4 avacado; peeled and diced
- 1 1/3 1 1/3 cups corn, frozen
- 1/2 cup red or green bell pepper; diced
- 1/2 cup salsa

Step 1
For Corn Salsa, rinse frozen corn in warm water for 1 minute and drain. Combine with bell pepper and salsa. Set aside. Shred lettuce mixture. Assemble tacos by sprinkling 1/3 cup lettuce onto center of each tortilla. Sprinkle with chicken, pineapple, avocado pieces and a tablespoon of corn salsa, dividing evenly.
