- 1 8 oz package cream cheese, softened
- 3 eggs
- 3/4 cup sugar
- 1/2 cup lemon juice
- 2 tsp grated lemon rind
- graham cracker pie shell

Step 1
Preheat oven to 350. Mix sugar, lemon juice and lemon rind, and heat on stove top until it turns into a lemony syrup. Let syrup cool to room temperature.
Using and electric mixer, combine the cream cheese and eggs until mixture is smooth. Add the cooled syrup and stir to combine everything thoroughly. Put into a graham cracker pie shell. Bake for 30 minutes.
