BEER BATTERED ONION RINGS

- 2 sweet or yellow onions, peeled and sliced into 1/2-inch rounds
- 3 cups bold ale beer, divided
- 2 teaspoons malt vinegar or cider vinegar
- Salt and pepper
- 2 quarts peanut or vegetable oil
- 3/4 cup all-purpose flour
- 3/4 cup cornstarch
- 1 teaspoon baking powder

Place onion rounds, 2 cups beer, vinegar, ½ teaspoons salt and ½ teaspoon black pepper in a zipper bag, and refrigerate for 30 minutes or up to 2 hours. This will help soften the onions and build flavor. Do not brine the onions for longer than 2 hours or the onions will become too soft to crisp properly. Be sure to flip the bag over half way through brining so they will get evenly soaked.
Heat oil in a Dutch-oven to 350 degrees. While you bring the oil to temperature, make the batter by combining the flour, cornstarch, baking powder, ½ teaspoon salt, and ¼ teaspoon black pepper in a large bowl and whisk together. Start by adding ¾ cup of the remaining 1 cup of beer and whisk together. Add 1 tablespoon of beer at a time until the batter falls from the whisk in a steady stream and leaves a faint trail on top of the batter. See picture above.
Adjust an oven rack to the middle position and heat oven to 200 degrees. Remove the onions from the refrigerator and dump out the brining liquid. Set onion rings on paper towels and extract as much moisture as possible, then separate the onion rings. Dip about ⅓ of the onion rings in the batter to coat. Carefully transfer onion rings one at a time to the oil being careful not to over crowd or the onion rings will stick together. Fry for 3 minutes and flip. Continue frying for 2 minutes then remove onion rings and set on a paper towel lined baking sheet and sprinkle with salt. Place onion rings in the heated oven to keep warm. Repeat this process with the remaining onion rings. Be sure to keep an eye on your oil temperature. Be sure your oil temperature is at 350 degrees before continuing with the next batch. You may need to adjust the heat while frying to keep your oil temperature at or as close to 350 degrees. Enjoy!
