Ingredients

  • 8 cups sliced apples
  • 1/3 cup firmly packed brown sugar
  • 1/3 cup white sugar
  • 1 Tablespoon cornstarch (or 2 1/2 Tbsp flour)
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 package pie crust mix
  • 2 Tbsp butter or margarine
  • Water or milk
  • Sugar

Step 1

1. Place the apples in a large bowl; mis sugars, cornstarch, cinnamon, nutmeg, and salt in a small bowl; sprinkle over apples; toss gently to mix. Let stand for about 10 minutes to allow a bit of juice to form.
2. Prepare the pie crust. Roll out half the dough to fit a 9 inch pie plate. Fit into pie plate and trim edges.
3. Roll out remaining pastry to a 12” round. Fold the round into quarters and make 3 slits near the centre in each of the folded edges to let steam to escape. Pile apple mixture into preparedness crust and dot with butter. Moisten the edge of the bottom pastry with water. Place folded pastry on apples so point is on center; unfold; trim to overhang an inch; turn edges under and press to seal. Pinch to make a stand up edge; flute or make your favourite edging. Preheat oven to 425F
4. For a crispy sugary top, brush the top of pastry with water or milk and sprinkle with sugar
5. Bake pie for 40 minutes or until juices bubble through the slits and apples are tender. If edges are browning too fast, cover with a narrow strip of foil.
