  • 3/4 pound spaghetti
  • 1 small onion
  • 1 pound ground turkey or other meat
  • 2 cloves garlic
  • 8 oz tomato paste
  • 1 teaspoon basil
  • 1 teaspoon kosher salt
  • 3 large eggs
  • 1/2 teaspoon pepper
  • 1 cup grate parmesan cheese
  • 1 1/2 cup shredded mozzarella cheese

Step 1

Preheat oven to 350 conventional.
Cook ¾ pound spaghetti per package instructions. Keep about ½ cup of the water for possible later use.
Chop one small onion finely.
Mix 8 oz of tomato paste with 1 teaspoon basil, 1 teaspoon kosher salt and ½ teaspoon pepper
In a large skillet heat 1 tablespoon olive oil over medium high heat. When hot add the onion. After a couple of minutes when the onion is starting to clear a little add 1 pound ground meat. I used turkey. Cook until browned and no more pink. Add 2 cloves crushed or minced garlic. Cook 1 more minute.
Add 6 oz. of the prepared tomato paste along with 2 oz of the pasta water to the meat. Mix well. If dry then add a little more of the water.
Whisk 3 eggs together in a large bowl and add the pasta when done. Mix in the remaining tomato paste along with 1 cup grated parmesan cheese and 1 cup mozzarella cheese. Mix well.
Spray a 9-10 inch pie pan with PAM. Put half of the meat mixture in the bottom and press flat. Add the pasta and again press into the pan.
Add remaining meat evenly over the top and sprinkle with ½ cup shredded mozzarella cheese.
Bake until golden brown. About 30 minutes.
Allow to rest for 10 minutes before serving.
