Raw Chocolate Tart with a Cashew Coffee Crust (Vegan-GF) 1 Picture

Ingredients

  • Filling Ingredients:
  • 1 cup cacao or raw cacao powder
  • 1 cup full fat or light coconut milk
  • 1 1/2 cup raw cashews, soaked for 1 – 2 hours
  • 1/4 cup raw honey or 3 tablespoons maple syrup
  • 1 teaspoon vanilla
  • 1/2 teaspoon sea salt
  • Crust Ingredients:
  • 1 1/2 cups cashews
  • 1 tablespoon finely ground coffee
  • 2 teaspoons cocoa or cacao powder
  • 1/4 teaspoon sea salt
  • 2 tablespoons coconut oil
  • 1 tablespoon raw honey or 1/2 teaspoon maple syrup
  • Topping suggestions:
  • cacao nibs
  • sea salt
  • hemp seeds + berries
  • toasted coconut
  • bananas
  • coconut whip

Preparation

Step 1

Filling:
Combine all of the ingredients in a food processor and blend until completely smooth. This could take a few minutes, set aside when done.

Crust:
Combine all of the ingredients in a food processor and pulse until it is finely ground and starts to form a ball.

Press the crust mixture into the bottom of a tart pan or if you don’t have a tart pan, you could you a brownie or bread pan lined with parchment paper instead.

Then pour the filling on top and smooth. Pop it in the freezer for 1 hour to set or in the refrigerator for a couple hours. Cut and serve immediately, keep any leftover tart refrigerated.
