Ingredients

  • 2 Tbsp. butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 1 1/2 cups flour
  • 1 1/2 tea. baking powder
  • 1/4 tea. salt
  • 3/4 cup shredded zucchini
  • 2/3 cup whole-berry cranberry sauce
  • 1/2 cup chopped pecans
  • 1 1/2 tea. grated orange peel

Step 1

In a small bowl, cream butter and sugar. Add egg; mix well. Combine the flour, baking powder and salt; add to creamed mixture. Fold in the zucchini, cranberry sauce, pecans and orange peel (batter will be thick).

Transfer to an 4x8 loaf pan coated with cooking spray.

Bake at 350 degrees for 40-45 minutes or until toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
