Passover Apple Matzo Kugel

Ingredients
- 4 large tart apples diced ( in food processor)
- 1/2 cup light brown sugar
- 1/4 cup orange juice
- 6 plain matzo- break into pieces
- 8 eggs
- 1 tsp salt
- 1tsp cinnamon
- 1 1/2 cups sugar
- 1/2 cup melted margarine (1 stick
- 3/4 cup golden raisins
- 3/4 cup dried apricots chopped
- 4 tbs margarine for topping ( cut up )

Preparation
Step 1
soak matzo in 1 1/2 cup warm water ( don't get mushy ). Wish eggs add salt, sugar, cinnamon, melted margarine, raisins & apricots. Squeeze matzo add to egg mixture& apples. Stir & pat in greased 13x9 pan. Dot with 4 tbls margin. If top gets too brown cover.
Can be made 2 days ahead. ( refrigerate ) bring to room temperature & reheat.
