Ingredients
- 3/4 cup butter, softened
- 3/4 cup sugar
- 1/3 cup plain yogurt
- 1 egg yolk
- 1 tsp grated orange rind
- 2 cups flour
- 1/2 tsp baking soda
- pinch salt
- 3/4 cup sliced almonds, divided
- 5 cups rhubarb
- 1/2 cup sugar
- 1 Tbsp orange juice

Preparation
Step 1
Cream butter with 3/4 cup sugar. Beat in yogurt, egg yolk and orange rind. Combine flour, baking soda, salt and 1/2 cup almonds, gradually stir into butter mixture. Using wet spatula or hands, spread dough evenly onto bottom and 3/4" up side of greased 10" sprinform pan. Toss rhubarb with 1/2 cup sugar and orange juice. Arrange evenly over dough. Sprinkle remaining almonds around edge. Bake at 350° for 45-50 min or until pastry edge is golden brown and rhubarb is tender. Let cool on rack. Remove sides of pan.
