Ingredients

  • 2 cups flour; sifted
  • 1 3/4 1 3/4 cups sugar
  • 3/4 cup cocoa
  • 1 1/4 1 1/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 3/4 cup margarine
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 3 eggs
  • 1 box powdered sugar
  • 1 stick margarine; softened
  • 3 oz cream cheese; softened
  • dash salt
  • 1 teaspoon vanilla extract
  • 4 tablespoon triple sec; approximately
  • 3 tablespoon half & half; approximately

Step 1

CAKE: Heat oven to 350'. Grease two 9" cake pans, or one large loaf pan. Mix flour, sugar, cocoa, baking soda, baking powder, and salt together. Drop in margarine; pour in 3/4 cup milk and vanilla. With mixer at low to medium speed, beat 2 1/2 minutes. Add 1/2 cup milk, eggs; beat 2 1/2 more minutes. Turn into pan(s). Bake 35 minutes, (45 minutes for loaf pan) or until cake tester inserted in center, comes out clean. FROSTING: Mix powdered sugar, margarine, cream cheese, salt, and vanilla with an electric mixer. Add Triple Sec and 2 tablespoons of half & half; mix together. Add more half & half if this mixture is too thick, but add a small amount at a time (it doesn't take too much to make this too runny) and when you have a fairly thick mixture, turn your electric mixer to maximum speed and beat it until the mixture is light and fluffy. It takes a little bit of time but it is worth the wait. Several ways to vary this recipe: *add 2 rounded tablespoons cocoa and use Kahula instead of Triple Sec and sprinkle chopped nuts on top *add 1/2 cup peanut butter, smooth or chunky, instead of the cream cheese and use only the half & half, you will need approximately 6 to 8 tablespoons, or more if mixture too stiff.
