  • 1 cup sugar
  • 3/4 cup flour
  • 3 eggs; separated
  • 2 1/2 cups milk
  • 1 cup coconut
  • 1 teaspoon vanilla extract

Step 1

FILLING: Combine sugar and flour. Add 1/4 cup milk, and egg yolks - mix well. Add the remaining milk. Cook over medium-high heat; when it starts to thicken, add vanilla. Take off heat when thick enough, and add 3/4 cup of coconut. Pour into pie shell MERINGUE: Beat egg whites until fluffy and stiff, add about 1 tablespoon of sugar at the end of mixing. Spoon onto pie filling. Sprinkle rest of coconut on meringue. Bake until coconut browns.
