Ingredients
- 12 ounces spiral shaped pasta, cooked and drained, 1 cup cooking water reserved
- 3 T. butter
- 1 T. flour
- 1 t. dry mustard
- pinch cayenne
- 12 ounce can evaporated milk
- 1/2 c. milk
- 3/4 c. sharp cheddar
- 3/4 c. monterey jack
- 1/2 c. grated parmesan
- 1/2 c. panko bread crumbs
- 2 T. chopped chives or scallions

Preparation
Step 1
Melt 1 T. butter in saucepan. Add flour, mustard, and cayenne and stir with wooden spoon to make a paste. Whisk in both milks and 1/2 t. salt and simmer until thickened, about 6 minutes. Add cheeses (reserving 2 T. parmesan) and whisk until melted. Combine panko and herbs, 1T. butter, and remaining parmesan in bowl and microwave until butter melts. Toss pasta with remaining 1 T. butter then stir in cheese sauce, adding the reserved pasta water if needed. Season with salt and top with breadcrumb mixture.
