Ingredients

• Filling:
• 2 cups chopped dates
• 1/2 cup brown sugar
• 1 cup water
• 1 tsp vanilla
• Cookies:
• 1 1/2 cups brown sugar
• 1/2 cup margarine or shortening
• 2 well beaten eggs
• 1 teaspoon baking soda dissolved in 2 Tbsp boiling water
• 1 tsp vanilla
• pinch salt
• 2 1/4 cups flour
• 1 heaping tsp baking powder

Preparation

Step 1

Heat filling ingredients in a pot till soft and mushy. Set in fridge to cool while you make the cookies.

Cream sugar and margarine. Add eggs, soda and vanilla. Mix in salt, flour and baking powder. Roll dough into small balls all the same size. Bake at 350 degrees for 12-15 minutes. Let cool a few minutes and then spread filling on the bottom of a cookie and place another cookie on top to make a sandwich.
