Ingredients

  • Meringue:
  • 4 egg whites, at room temperature
  • 1 cup sugar
  • 1 tsp cornstarch
  • 1 tsp vinegar
  • 1 tsp vanilla
  • Topping:
  • 1 cup whipping cream
  • 2 Tbsp sugar
  • 1 tsp vanilla
  • 2 cups peeled and sliced fruit - kiwifruit, strawberries, peaches or a combination

Step 1

Beat egg whites until soft peaks form. Add sugar and cornstarch gradually, beating until stiff. Beat in vinegar and vanilla. When rubbing between fingers, there should be no grainy feel to the whites. Outline a foil-lined cookie sheet in a 9-inch (22 cm) circle. Spread meringue in circle. Bake in 250 degree F (130 degree C) oven for 50 to 60 minutes. Turn off heat and allow meringue to stand in oven for at least 1 hour. Cool before removing foil. Cover with topping.

Whip cream, sugar and vanilla until stiff. Spread over top of meringue layer. Arrange fruit of your choice in an attractive pattern over top. Glaze fruit, if desired. Chill until ready to serve. May be made a day ahead with cream and fruit added the day it is needed.
