Ingredients
- cup garbanzos, rinsed and drained, OR:
- 70 grams Freekeh, cooked and cooled, both optional
- 1/4 cup each chopped carrots, cucumbers, celery, peppers and red onion
- 14 cherry tomatoes, halved
- 8 Nicoise or Kalamata olives, pitted
- 2 tablespoon pine nuts
- 3 cups Romaine lettuce
- DRESSING:
- 1/4 cup buttermilk
- 1/4 cup greek yogurt
- 1 tsp. red wine vinegar
- 1 tsp. dried oregano
- 1/8 tsp. salt
- 1/2 tsp. minced garlic (Optional)
- freshly ground pepper to taste
- 1/4 cup crumbled light feta (40 grams)

Step 1
Combine dressing ingredients and divide between two jars.
Add freekeh or garbanzos, followed by chopped veggies then tomatoes and olives.
Top with lettuce, then pine nuts and screw on lids.
