Ingredients

  • cup garbanzos, rinsed and drained, OR:
  • 70 grams Freekeh, cooked and cooled, both optional
  • 1/4 cup each chopped carrots, cucumbers, celery, peppers and red onion
  • 14 cherry tomatoes, halved
  • 8 Nicoise or Kalamata olives, pitted
  • 2 tablespoon pine nuts
  • 3 cups Romaine lettuce
  • DRESSING:
  • 1/4 cup buttermilk
  • 1/4 cup greek yogurt
  • 1 tsp. red wine vinegar
  • 1 tsp. dried oregano
  • 1/8 tsp. salt
  • 1/2 tsp. minced garlic (Optional)
  • freshly ground pepper to taste
  • 1/4 cup crumbled light feta (40 grams)

Step 1

Combine dressing ingredients and divide between two jars.
Add freekeh or garbanzos, followed by chopped veggies then tomatoes and olives.
Top with lettuce, then pine nuts and screw on lids.
