Meatloaf Meatballs

Ingredients
- 1/4 c. plus 2 tbsp. ketchup
- 1 tbsp. brown sugar
- 1/2 c. celery, chopped
- 1/2 c. onion, chopped
- 2 garlic cloves, chopped
- 1 c. parsley, chopped
- 3/4 c. panko breadcrumbs
- 1/4 c. freshly grated Parmesan cheese
- kosher salt
- Freshly ground black pepper
- 1 egg
- 1 lb. ground beef
- 1/2 lb. ground pork

Step 1
Preheat oven to 400 degrees F. In a small bowl, combine 1/4 cup of ketchup with brown sugar. Set aside.
In the bowl of a food processor, add celery, carrots, onion and garlic. Pulse 4 to 5 times. Add 3/4 cup of parsley and pulse until well combined. Scrape down sides of the bowl as needed.
In a large mixing bowl combine vegetable mixture with breadcrumbs, cheese, 1 tsp salt, 1/2 tsp pepper, egg and 2 tbsp ketchup. Using a large spoon, mix together until well combined. Add the beef and pork; mix together by hand until just combined. Don't over mix to maintain tender meatballs. Form 1 1/2" meatballs and place in an oven proof dish. Meatballs should be touching. Brush each meatball with the ketchup glaze.
Bake until meatballs are browned, approximately 20 minutes. Garnish with more parsley and serve immediately.
