Ingredients

  • 1 16oz dry penne
  • 1 tsp olive oil
  • 2 cloves garlic, minced
  • 1/8 lb prosciutto, chopped
  • 1/2 tsp red pepper flakes
  • 2 (16oz) cans whole tomatoes
  • 1/2 cup vodka
  • 1 cup heavy cream
  • 1 cup parmesan cheese
  • 1/2 cup chopped basil
  • salt to taste

Preparation

Step 1

1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8-10 minutes or until all denté, drain.
2. Heat oil in a large skillet or wok over medium heat. Saute garlic, prosciutto and red pepper flakes for 1 minute. Stir in tomatoes, and cook for 3 minutes. Stir in vodka and cream. Simmer for 15 minutes, or until thickened. Stir in parmesan and chopped basil. Toss with pasta until evenly coated.
