Ingredients

  • 2 c. flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 egg, well beaten
  • 3/4 c. chopped nuts
  • 2 c. chopped fresh cranberries
  • 1 c. sugar
  • 1/2 tsp. soda
  • 3 T. cooking oil
  • 3/4 c. orange juice

Preparation

Step 1

Sift flour, sugar, baking powder, soda and salt together; add oil, beaten egg and orange juice. Mix well. Add nut and cranberries; do not overmix the batter. Turn into greased 9 x 5 x 3-inch loaf pan. Spread corners and sides slightly higher than center. Bake at 350 for approximately 1 hour or until a toothpick inserted comes out clean. Cool somewhat before removing from pan. Wrap and store overnight for easy slicing.
