Ingredients

  • 1 T. oil
  • 2 cloves garlic
  • 1/2 c. mushrooms
  • 2/3 c. onion
  • 2/3 c. red bell pepper
  • 1/8 tsp. oregano
  • 1 (28-oz) can tomatoes
  • 2/3 c. frozen lima beans
  • 1/2 c. great northern benas
  • 3 T. nonfat sour cream
  • 3 T. shredded low fat cheddar cheese

Preparation

Step 1

Cook garlic, mushrooms, onion and bell pepper. Cook for 5 minutes, stirring occasionally. Add chili powder, cumin, red pepper and oregano. Cook and stir for 1 minute. Add tomatoes and beans. Reduce heat to medium low. Simmer for 15 minutes, stirring occasionally. Top servings evenly with sour cream and cheese.
