Ingredients

  • 3 c. cooked diced potatoes
  • 2 T. butter
  • 3 T. flour
  • 1 1/2 tsp. salt
  • 2 c. milk
  • 2 T. chopped parsley
  • 2 T. chopped pimento
  • 1/2 c. grated cheese
  • 1/2 c. buttered crumbs
  • 1/4 tsp. paprika

Step 1

Cook potatoes in skins; peel and dice. Melt butter; remove from heat. Blend in flour and salt. Add milk slowly, stirring constantly; stir until mixture thickens and boils. Add parsley, pimento and potatoes. Turn into oiled casserole. Sprinkle cheese over top, then bread crumbs and paprika. Bake at 375 degrees for 30 minutes. For crumbs, melt 1 tablespoon butter in pan, stir in 1/2 cup soft bread crumbs and blend thoroughly.
