Ingredients

  • 3 lbs. boneless pork loin, rolled and tied
  • 1 tsp dried thyme leaves
  • 1 tsp dried sage leaves
  • 1 tsp black pepper
  • 2 Tbsp oil
  • 1 cup chopped onion
  • 3 garlic cloves, minced
  • 1 apple, cored and chopped
  • 1/2 cup apple juice concentrate
  • Salt, optional

Step 1

DO NOT remove the string from the pork. mix together the thyme, sage and pepper. Rub into meat.

Heat the oil in a heavy casserole. Brown the pork over medium-high heat. Pour off all but 2 tablespoons of fat.

Saute' the onion ad garlic for a minute in casserole dish.

return the pork to the casserole. Add the apple and apple juice concentrate. Bring to a boil.

Cover. Braise at 350 degrees for 1 hour or until a meat thermometer registers 170 degrees.

Remove pork to a platter. Spoon off excess fat from the pan juices.

Puree in a blender or processor.

Return to pan to heat. Season with salt if desired. Serve with sliced pork.
