Ingredients

  • 2 TBS coconut oil
  • 2 cups cooked white or brown rice
  • 3 eggs, beaten
  • 6 scallions, chopped
  • 1 handful cilantro, chopped
  • 2 TBS soy sauce
  • 1/2 cup chopped pineapple
  • 1 tsp Chinese five spice powder

Step 1

In a large skillet over medium high heat, cook the egg, scallions and cilantro in half of the oil. Using a spatula, cut this omelet-like mixture up into small chunks as it is cooking.
Push the egg to the sides of the skillet, add the remaining oil to the middle and add the rice. Cook for a few minutes and then turn the rice. Cook for a few minutes more and then mix in the egg, pineapple, five spice powder and soy.
Fry this mixture for about 10 minutes, turning and stirring occasionally.
Turn heat to low and cover until served.
