Great White Chili

Ingredients
- 5 cans White Northern Beans, drained (I like Bush's brand)
- 3 cups monteray jack cheese, shredded
- 3-4 boneless chicken breasts, cooked and shredded
- 1 Tb. olive oil
- 1 medium onion, diced very fine
- 5 tsp. minced, bottled garlic or 4 garlic cloves diced
- 2 cans mid chopped green chilis (4 oz. size cans)
- 2 tsp. cumin
- 1/4 tsp. cayenne pepper
- 1 1/2 tsp. oregano
- 1 tsp. Mrs. Dash
- 6 cups chicken stock

Step 1
Heat olive oil in large soup pot. Add onions and garlic and saute till onion is tender. Stir in chilies, cumin, oregano, cayenne pepper and Mrs. Dash. Continue to stir over medium heat for 2 minutes. Add the drained beans and the chicken stock. Bring to a boil and then add the shredded chicken. Reduce heat to low and simmer for one hour. Add cheese gradually, allowing it to melt. Season with salt and pepper to taste. It's really good to serve this with tortilla chips.
