Ingredients

  • Creamed Mushrooms:
  • 3 Tbsp. unsalted butter
  • 1 large shallot, minced
  • 1 1/4 pounds wild or button mushrooms, sliced
  • 3/4 cup chicken stock
  • 3/4 cup heavy cream
  • 1/2 tsp. salt or more to taste
  • 1/8 tsp. freshly cracked black pepper
  • 4 slices multigrain bread, toasted
  • Paprika

Preparation

Step 1

Warm the butter in a saute pan over medium heat and add the shallot. Saute until the shallot beings to soften, a minute or two. Stir in the mushrooms and cook until they are limp and have given up much of their liquid, 6 to 8 minutes longer. Add the stock, cream, salt, and pepper and cook until the liquid reduces by about half. Arrange the toast on 4 plates and top each with an equal portion of the mushrooms and sauce. Dust with paprika and serve.
