Ingredients

  • 1 8oz. Box pad thai or flat rice noodles
  • 1 lb. ground pork
  • 1 head bok Choy cut icrosswise into 1/2 inch thick slices
  • 2 cups match stick carrots
  • 1/2 cup chopped green onions
  • 1 tablespoon bottled or fresh minced ginger
  • 1.small clove minced garlic
  • 1/2 cup chicken broth
  • 1/4 cup soy sauce
  • 3 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 1/2 tablespoon garlic-Chile sauce
  • 1 teaspoon sugar

Preparation

Step 1

1. In a large bowl, combine noodles and hot water to cover; let stand for 10 minutes.. drain and set aside.

2. In a large skillet, cook pork pork until no longer pink. Drain and return to pan. Add bok choy stirring frequently until bok Choy is starting to wilt. Add carrots and next three ingredients, cook stirring constantly for 2 minutes.

3. In a small bowl, whisk together broth and next 5 ingredients. Add to pork mixture and cook 1 minute. Add noodles and cook 2 minutes stirring to combine. Serve immediately.
