  • Orange Poppy Seed Dressing:
  • 8 oz penne noodles, cooked according to package directions
  • 2 c packed fresh baby spinach leaves
  • 1 c sliced strawberries
  • 1 c pineapple chunks
  • 1/4 c dried cranberries, or dried blueberries
  • 1/2 c salted cashews, or other nut like pecans or walnuts
  • 1/2 c extra virgin olinoi oil
  • 1/3 c apple cider vinegar
  • 1/4 c plain greek yogurt (I used sour cream)
  • 1 Tbsp Dijon mustard
  • 3 Tbsp honey
  • 1/3 c orange juice
  • 2 tsp poppy seeds
  • salt and pepper

Step 1

Combine all dressing ingredients in a jar, cover and shake well. Set aside. (This made way too much dressing, so add the desired amount and save the rest for another use.)

Combine penne, spinach, strawberries, pineapple, cranberries, and cashews in a large bowl and toss with the prepared dressing.

Serve immediately or cover and chill for 1 hour before serving.
