Ingredients
- 2 Tbps grainy mustard (Dijon)
- 2 Tbsp honey or pure mayple syrup (prefer the syrup)
- 1 tsp. minced fresh rosemary
- 1 Tbsp lemon zest
- 1 2 lb. salmon fillet with skin ( 1 1/2 - 2" thick)
- Salt and Pepper
- Cedar Grilling Plank

Preparation
Step 1
1. Soak the plank immersed in water to cover for about 2 hours
2. Preheat ALL burners on grill to high - just before putting the planked salmon on the grill lower temp to med-high and turn the center burner off - this is where you will place the fish
3. Stir together mustard, honey, rosemary, zest, and 1/2 tsp salt, 1/2 tsp pepper
4. Spread mixture on flesh side of salmon and let stand at room temp for 15 minutes
5. Put salmon on plank, skin side down
6. Grill covered with lid on center burner until salmon is just cooked thru- edges slightly browned, @ 13-15 minutes
7. Let salmon rest on plank for another 5 minutes before serving
