Better Baked Ziti

Ingredients

  • 8 oz uncooked ziti pasta
  • 2 tbsp. olive oil
  • 1 cup chopped onion
  • 3 cups chopped fresh zucchini
  • 2 cups chopped fresh tomato
  • 2 tbsp. minced garlic
  • 1 1/2 cups part skim mozzarella cheese, divided
  • 2 tsp Italian seasoning
  • 1/4 tsp crushed red pepper flakes
  • 3/4 tsp salt, divided
  • 1/2 cup part skim ricotta cheese
  • 1 egg

Preparation

Step 1

preheat oven to 400 degrees. Cook pasta according to package directions; drain. heat oil in a large skillet over medium high heat. Add onion and zucchini to skillet; saute five mins. add tomato and garlic; saute three mins more. REmove from heat and stir in cooked pasta, 1 cup mozzarella, Italian seasoning, crushed red pepper and 1/2 tsp salt. in a medium bowl, combine ricotta, egg and remaining 1/4 teaspoon salt. stir in ricotta mixture into pasta mixture and then spoon mixture into an 8 inch square baking baking dish misted with cooking spray. sprinkle remaining 1/2 cup mozzarella over top Bake for 15 mins or until bubbly and browned.
