Ingredients

  • Peanut Sauce:
  • 1 large garlic clove, minced
  • 1 tbsp. sesame oil
  • 3 tbsp. smooth peanut butter
  • 2 tsp fresh ginger
  • 3 tbsp fresh lime juice
  • 2 tbsp low sodium soya sauce or tamari
  • 2 tsp honey
  • Rice noodles, cook as directed
  • Chop veggies, very fine: celery, carrot, pepper (red for color), any others as desired.
  • 1/2 c - 1 c of chopped peanuts

Preparation

Step 1

Mix sauce ingredients altogether in a blender, store in fridge.

Put rice noodles in bottom of bowl, top with veggies, top with peanut sauce and chopped peanutes.
