Ingredients
- Peanut Sauce:
- 1 large garlic clove, minced
- 1 tbsp. sesame oil
- 3 tbsp. smooth peanut butter
- 2 tsp fresh ginger
- 3 tbsp fresh lime juice
- 2 tbsp low sodium soya sauce or tamari
- 2 tsp honey
- Rice noodles, cook as directed
- Chop veggies, very fine: celery, carrot, pepper (red for color), any others as desired.
- 1/2 c - 1 c of chopped peanuts

Preparation
Step 1
Mix sauce ingredients altogether in a blender, store in fridge.
Put rice noodles in bottom of bowl, top with veggies, top with peanut sauce and chopped peanutes.
