Ingredients
- 2 cups dry instant white rice
- 2 cups water
- 4 tablespoons Homemade Gourmet® Chicken Enchilada Seasoning
- 1 16-ounce can pinto beans, undrained
- 6 green onions, chopped
- 1 tomato, diced
- 1 15-ounce can whole kernel corn, drained
- 1 13.5-ounce bag baked tortilla chips, optional
- salsa and sour cream, optional

Preparation
Step 1
1. Preheat oven to 350 degrees. In a large microwave safe bowl, combine rice, water and seasoning; microwave uncovered on high for 5 minutes, set aside.
2. Combine beans, corn, onions and tomatoes, add rice mixture; pour into a greased 13x9x2 baking dish. Bake for 20-25 minutes. Serve with chips, salsa and sour cream, if desired.
