Ingredients
- 1 tsp. oil
- 1 large onion, chopped
- 1 green bell pepper, seeded and chopped
- 1 to 2 stalks celery, chopped
- 2 to 4 cloves garlic, minced
- 2 lb. lean ground beef
- 2 lb. diced pork
- 1 14.5 oz can stewed tomatoes
- 1 12 oz bottle chili sauce
- 1 cup water
- 1 cup beer
- 1/2 cup chili powder
- 1/3 cup tomato paste
- 1 4 oz can diced green chilies
- 1 tbsp. ground cumin
- 4 tsp. Better than Bouillion Beef Flavor Concentrate
- 1/2 tsp. oregano

Preparation
Step 1
Heat oil in large pot. Add onion, bell pepper, celery and garlic; saute for 5 minutes. Add beef and pork; cook until browned. Add remaining ingredients and simmer for 1 hour or until pork is tender.
Remove from heat and let cool slightly. Refrigerate overnight, if possible, and skim fat from surface.
If consistency is too thin, add corneal to thicken.
