Ingredients

  • 1 pound turkey tenderloins, cut diagonally into thin slices
  • 2 teaspoons flour
  • Water/oil mixture
  • 1/2 cup chopped onion
  • 2 cups sliced mushrooms
  • 1 cup low sodium chicken broth
  • 2/3 cup low fat sour cream, at room temperature
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons tomato paste
  • 2 teaspoons lemon juice

Preparation

Step 1

Coat the turkey with the flour. Coat a skillet with water/oil mixture over high heat; add turkey slices and cook for 1 minute per side or until slightly browned. Add onions and mushrooms; reduce heat to low and cook for about 4 minutes. Add broth, sour cream, Worcestershire sauce, tomato paste and lemon juice; cook until sour cream has dissolved (BE SURE NOT TO BOIL!). Return turkey to the skillet and simmer for 3 minutes; serve.

SERVING SUGGESTION: Mashed russet potatoes and steamed broccoli.
GLUTEN FREE: Make sure flour, chicken broth, Worcestershire sauce and tomato paste are gluten free.
