Ingredients

  • 6 hard-cooked eggs
  • 3 Tbsp. reduced-fat mayonnaise
  • 1/2 cup finely chopped green onions
  • 1 1/2 Tbsp. sweet pickle relish
  • 1/4 to 1/2 tsp. celery seed
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper
  • 4 sliced reduced calorie, high fibre bread
  • 2 cups packed spring greens

Preparation

Step 1

Separate egg yolks from whites; discard 4 yolks or reserve for another use.

Combine remaining 2 egg yolks and mayonnaise in medium bowl; mix well. Finely chop egg whites and add to mixture. Stir in green onions, pickle relish, celery seed, salt and pepper; mix well.

Top each bread slice evenly with greens and egg salad.
