Dough: 1TBSP barley malt syrup 1tsp) yeast
1.5tsp salt
1C plus 2TBSP lukewarm water (about 95°F or 35°C)
3.5C flour
Poaching liquid: 2 to 3 quarts water
1.5 TBSP barley malt
1TBSP (0.5 oz / 14 g) baking soda
1tsp salt, or 1 1/2 teaspoons coarse kosher salt
450F 8min on each side after boiling (do float test first) makes 13ea 3.8oz
