  • 1 tsp. olive oil
  • ½ cup pepitas (pumpkin seeds)
  • ½ tsp. salt
  • 1 head butter lettuce, washed and torn
  • 1 ½ cups sliced Braeburn apples (used Honey Crisp)
  • ½ cup raisins
  • Buttermilk Dressing recipe in file

Step 1

In a nonstick skillet, heat olive oil over medium heat. Add pepitas to pan. Stir to coat with oil. Sprinkle with salt. Cook for 4-5 minutes, or until toasted, stirring frequently. Remove pan from heat and allow to cool. In a large bowl, combine lettuce, apples and raisins. Add cooled pepitas to bowl, tossing gently to combine. Serve with buttermilk dressing.
