Saag Chicken - Instant Pot

Ingredients
- 2 tablespoons oil
- 1 teaspoon whole cumin seeds
- 1 red onion, diced
- 1 tablespoon freshly grated ginger
- 1 and 1/2 pounds, boneless, skinless chicken thighs cut into smaller pieces
- 1 teaspoon turmeric
- 1 teaspoon cayenne pepper
- 1 and 1/2 teaspoons salt
- 1 large piece (about 2 inches) cinnamon, broken
- 1/2 cup diced tomatoes
- 1 cup packed very finely chopped kale (used whole bag, i think 6-8 oz)
- 1 cup packed very finely chopped spinach (need full 8-10 oz container)
- 2 tablespoons fresh lime juice

Instructions
Heat the oil at the base of the instant pot. Add in the cumin seeds and wait until the seeds begin to sizzle.
Add in the diced red onion.
Add in the ginger and saute for about 3 minutes, until the onion softens and wilts.
Add in the chicken thighs, turmeric, cayenne pepper and salt and mix well. Add in the cinnamon and stir well.
Add in the tomatoes, kale and spinach and 1/4 to 1/3 cup water and stir well.
Turn off the saute mode. Set on 4 minutes of pressure. Release the pressure after 10 minutes.
Stir well. If you feel there is too much liquid, you can turn back on the saute mode to cook for three to 4 minutes.
Stir in the lime juice. Garnish with cilantro and serve.
