paneer paratha – cottage cheese flatbread

Ingredients
- for the dough:
- 2 cups whole wheat flour/atta
- water
- for the paneer stuffing:
- 200 or 250 gms paneer
- 1 or 2 green chilies, finely chopped
- 1 tsp red chili powder
- 1 tsp mango powder
- 1/4 tsp or 1/2 tsp punjabi garam masala or garam masala powder
- salt or rock salt as required
- ghee or oil for frying the parathas

Preparation
Step 1
preparing the dough:
1.make smooth dough with the whole wheat flour and enough water.
2.cover and keep aside.
preparing the stuffing:
1.grate or crumble the paneer with your hands.
2.mix all the spice powders, green chilies and salt with the paneer.
3.keep aside.
preparing the parathas:
1.take two balls from the parathas.
2.roll them into two small rounds about 2 to 3 inches in diameter.
3.place the paneer filling on one of the round.
4.cover this with the other one.
5.seal the edges.
6.with some dusting flour sprinkles on the rolling board, roll the stuffed paratha to a size of about 6 to 7 inches in diameter.
7.heat the griddle.
8.fry the parathas on the griddle with ghee or oil till they are evenly browned and well cooked.
9.in this way make all the paneer parathas.
10.serve paneer paratha hot with yogurt or butter or your favorite pickle.
Notes
if the garam masala powder is a homemade one than add only ¼ tsp. for readymade garam masala add ½ tsp. homemade ones are far more aromatic and strong than the store brought ones.
