Green Bean Salad

Ingredients

  • 2 lb. green beans
  • 1/2 red onion - thinly sliced
  • 1 T. rice vinegar
  • 2 T. soy sauce
  • 1 t. honey
  • 1 t. hot sauce
  • 1 T. peanut oil
  • 1 pint grape tomatoes - halved
  • 1/2 c cilantro
  • 1/4 c peanuts - chopped
  • More peanuts for garnish

Preparation

Step 1

Boil green beans for 2-3 minutes in salted water. Drain.
Combine onion and vinegar in a bowl and let stand for 5 min., turning occasionally.
Whisk together soy sauce, honey, hot sauce and peanut oil. Add the green beans and toss to coat. Then toss with the tomatoes, onion, cilantro and peanuts.
