Ingredients

  • DRESSING:
  • 2 medium sized tomatoes, diced
  • 1 large cucumber, diced and seeded
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1/2 onion, red or yellow
  • 1 jar caper, drained
  • 1/2 cup olive oil
  • 1/4 cup white wine vinegar
  • 1 clove garlic, pressed
  • 1/8 tsp. cumin
  • Salt and pepper to taste

Step 1

Combine the vegetables together then prepare the Dressing. Add the dressing to the vegetables and toss. If you would like more of a salad appearance, chop the vegetables bigger. For a salsa appearance, dice them smaller. To get the salad to keep longer, then seed the tomatoes.
