Ingredients

  • 1 3/4 cups cake flour
  • 1 cup sugar
  • 2 tsps. baking powder
  • 1/4 tsps. salt
  • 1/2 cup vegetable oil
  • 1/2 cup fresh orange juice
  • 2 tbsp. honey
  • 4 egg whites
  • 2 tbsp. confectioners' sugar
  • 1 recipe Orange Glaze (recipe follows)

Preparation

Step 1

Preheat oven to 350 degrees. Spray 4 (5 x 3 x 2 inch) loaf pans with nonstick baking spray with flour. Set aside.

In a large bowl, sift together flour, sugar, baking powder and salt. Add oil, orange juice and honey, whisking until smooth.

In a small bowl, beat egg whites at high speed with an electric mixer until soft peaks form. Gradually add confectioners' sugar, beating until stiff peaks form. Gently fold into batter. Divide batter evenly among prepared pans.

Bake until a wooden pick inserted in the center comes out clean, 20-25 minutes. Let loaves cool in pans for 10 minutes. Transfer to a wire rack to cool completely. Pour Orange Glaze over cakes.
