El Fresco Tacos


This is a lighter version of tacos

  • soft taco shells
  • 1 lb ground beef
  • old el paso taco season
  • Chili Pepper medium hot chopped (to taste)
  • chopped onion (to taste)
  • chopped green onion (to taste)
  • 4 roma tomatoes
  • 1/2 C fresh cilantro chopped
  • Lime juice (about 1 T)



Step 1

Chop all veggies (use as much or little as you like) and add lime juice. Refridgerate at least 30 minutes.
Brown ground beef and taco seasoning according to pkg.
Heat soft taco in microwave approx 10 seconds
Add all ingredients.
Top with a small amount of light sour cream (optional)
