Bacon-Potato Soup

Ingredients
- 4 slices bacon, chopped
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 4 potatoes, peeled and cut into 1” pieces
- 3 c chicken broth
- 3 c whole milk
- 1 t kosher salt
- 1/4 t pepper
- 1 c cheddar cheese, grated
- 2 T chopped fresh chives
Preparation
Step 1
Cook bacon in large pot over medium heat, stirring occasionally, until crisp, 5-7 minutes. Add onion and garlic. Cook, stirring often until softened, 6-8 minutes. Add potatoes, broth, milk, salt and pepper. Bring to boil; reduce heat and simmer until potatoes are very soft and soup is slightly thickened, 30-40 minutes. Serve topped with cheese, chives and bacon.
