Ingredients

  • 2 tbsp olive oil
  • 1/2 cup chopped onion
  • 1 clove garlic, crushed
  • 2 large potatoes, peeled and chopped
  • 2 cup water
  • 1 1/2 cup grated parmesan cheese
  • 2 cups milk
  • 2 tsp salt
  • pepper to taste
  • 1/2 cup cream
  • 1 tbsp parsley

Preparation

Step 1

1. Saute onions in olive oil. Add garlic and potatoes to pot, add the water and bring to a boil. Simmer for 20 mins.

2. Stir in 1 cup of the parmesan cheese. Pout in blender or food processor until smooth. Return to pot, add milk and seasonings. Heat for 5 mins. Remove from heat, add cream. Sprinkle bowls with remaining cheese and parsley.
