Ingredients

  • Sauce:
  • olive oil
  • 1/2 cup chopped onion, reserve some
  • 2 cloves minced garlic
  • salt and pepper
  • 1 tsp cumin
  • 2 TBS tomato paste
  • Enchilada makings:
  • 1 lb. breakfast sausage
  • Scrambled eggs
  • 3 cups roma tomatoes, seeded and chopped, reserve some
  • 1 1/2 cup chicken broth
  • fresh cilantro
  • flour tortillas, warmed in microwave
  • Shredded cheese

Preparation

Step 1

Sauce:
Saute half of the onions and all the garlic in olive oil in hot skillet
Add salt, pepper, cumin and tomato paste to onion mixture. Cook on low.
add roma tomatoes and chicken stock. Cook to reduce.

Add chopped cilantro to reserved onions and tomatoes.

Brown sausage and set aside.

Scramble eggs.

Grease 9x13 baking dish. Roll sausage, eggs, tomatoes, cheese and cilantro mixture tightly into a warmed flour tortilla. Place seam side down in baking dish. Top with above sauce and more cheese.

Bake 375 degrees for 20 to 30 minutes.
