A banana bread batter is spiked with coconut before being baked to donut perfection. After cooling, a banana glaze is spooned over each donut before a snow shower of shredded coconut takes place.

Ingredients

  • Donuts
  • 1 cup mashed banana
  • 1/4 cup butter, melted
  • 2 eggs
  • 1 cup milk
  • 2 teaspoons coconut extract
  • 2 cups flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup shredded coconut
  • Glaze
  • 1/2 cup mashed banana
  • 1-1/2 cups powdered sugar
  • 1 teaspoon coconut extract
  • 1/4 cup milk
  • 2 cups shredded coconut, to garnish

Preparation

Step 1

Donuts

Preheat oven to 350 degrees.
In a large bowl, whisk together banana, butter, eggs, milk and coconut extract.
Add flour, sugar, baking powder, salt and shredded coconut and stir until just combined.
Add batter to piping bag - or plastic storage bag with corner snipped to act as a piping bag - and fill wells of a greased donut pan just to top.
Bake for 12-15 minutes or until just beginning to turn golden. Allow to cool 3-5 minutes in pan before cooling completely on wire rack.

Glaze

In small bowl, whisk together all ingredients until combined. Spoon over cooled donuts.
Garnish tops of donuts with additional shredded coconut.

Serves: 1 dozen
